Pumpkin Spice Buckwheat Waffles (GF)



  • 2 cups buckwheat flour (can also use oat flour)

  • 1 tablespoon baking powder

  • ¾ teaspoon salt

  • 1 teaspoon cinnamon

  • 1 tsp pumpkin pie spice

  • 3 large eggs

  • 2/3 cup unsweetened vanilla almond milk

  • 1/4 cup melted coconut oil

  • 2 tbsp melted ghee (i used this one) - can also use butter or more coconut oil

  • ½ cup packed pumpkin puree

  • 3 tablespoons maple syrup

  • 1 tablespoon vanilla extract


  1. Preheat waffle maker

  2. Combine all wet ingredients in the bowl (eggs. almond milk, vanilla, coconut oil, maple syrup, ghee)

  3. Slowly add in flour, folding it in until it is fully combined

  4. Add in the spices, baking powder, salt, and all other remaining ingredients

  5. If you have time, let the batter rest for at least 5 min. This gives the flour time to absorb all of the wet ingredients

  6. Spray waffle maker with coconut oil spray or cooking spray of your choice

  7. Use a ladle to add waffle mix to the waffle maker and cook waffles until golden brown

  8. Serve with maple syrup, yogurt, or your topping of choice!
